Self taught baker Simon discovered his passion for all things bread about 5 years ago. He started to dabble in sourdough after a friend gave him some leaven to play with. That marked the beginning of Heart Breads. Now he and his wife Rachel run a small artisan organic wood fired bakery supplying the local Byron Bay Regional Farmers Markets and a few local restaurants.
Their love of the age- old sourdough process coupled with the ability to grow their own ingredients on their farm in Byron Bay and the space and desire to build their own oven enabled them to develop a business that has grown into a full time pursuit for them both.
As long term Byron Bay residents and having run businesses in Byron before, they realised the importance of creating a sustainable local food product for which Byron Bay is becoming renowned. As Simon and Rachel started t discover the wonderful world of food and in particular the way food used to be made and grown it became obvious to them that in order to make authentic breads, an authentic oven would be needed.
